Chef Kaori taught her ramen and mochi making classes at our house for my wife's birthday, and it was a wonderful experience. The participants ranged from middle schoolers to, shall we say, "older" adults, and included people who grew up eating Japanese food to a few who had never tasted ramen before. However, Chef Kaori made everyone feel comfortable and confident as they learned how to prepare the various items, and they all thoroughly enjoyed both the experience and the delicious food that resulted. At the end of the evening, everyone was eager to try making the dishes on their own, which is the best indicator of a successful class.
So speaking of the food, we learned how to make the following: Mochi - Plain white mochi, green tea mochi, pink rose mochi (a big hit with the kids!), and coconut mochi, with traditional read bean filling, fresh strawberries, and chocolate. We were able to use some ice cream we had on hand as a filling as well (these also disappeared quickly!). Ramen - Handmade ramen noodles with that "springy", satisfying texture you can only get from fresh noodles (Chef Kaori taught the manual method and also showed us how we could use our Kitchen Aid mixer). Tonkotsu and miso/spicy miso broths. Japanese-style pork chashu that was "melt in your mouth" good, and soft-boiled shoyu eggs that no ramen can be without (these were made ahead of time due to time constraints, but clear instructions/recipes were provided). I am getting hungry again just writing this! Overall, Chef Kaori was not only an excellent instructor, but also made the whole process for the organizer of the event (me) quite painless. She was flexible and accommodating in the planning stages, arrived ahead of time and brought all the necessary ingredients and accessories to our house, adapted seamlessly to our somewhat cramped kitchen, and made sure to minimize the amount of cleanup required. As one of our guests was leaving, she thanked me for inviting her to the class and said that there is just something about cooking in your own home (vs a professional or commercial kitchen) that just makes the learning experience so much more real. I certainly agree, and I will definitely plan to have another class at our home with Chef Kaori at some point in the future. - John K., San Carlos, CA |
